Gluten Free Natural Granola
This granola recipe is amazing served with milk as a cereal, topping for yogurt and smoothie bowls, and even plain. It can be easily adapted for the ingredients you have on hand. I make this recipe weekly, because it doesn’t last long in my house, and it is different every time and taste better and better.

Ingredients
- 2 cups puffed rice
- 1 cup oats Quick or old-fashioned
- 2 tbsp coconut oil
- 1/2 cup chopped nuts/seeds any type you have, I used pecans, almonds, pumpkin
- 2 tsp cinnamon
- 1/2 tsp pink himalayan sea salt sea salt works fine too
- 1/4 cup honey or other liquid sweetener
- 1/3 cup chopped dried fruit I used dates and craisins

Instructions
- Preheat oven to 325 degrees Fahrenheit. In a large bowl, add puffed rice, oats, coconut oil, nuts/seeds, cinnamon, salt, and honey. Mix until combined
- Add mixture onto a baking tray lined with parchment paper and bake for 10 minutes and then stir the mixture so it bakes evenly and add in dried fruit. Continue to bake for another 5-10 minutes until granola is golden brown. This timing may vary due to slightly different oven temperatures.
- Let completely cool and store in an airtight container, will last approximately 2 weeks - if you can make it last that long!
